According to Eating Asia, one of the most popular chicken rice ball shops in Melaka, Hoe Kee who was a fisherman  decades ago was arrested when pursuing a catch in the Indonesian waters. His wife had no choice but needed to be the breadwinner of the family. At first she did laundry but the money she earned was not enough to feed her children, hence, she decided to sell Hainanese chicken rice at Melaka’s main jetty to the labors working at the docks.

During that busy time, an official mealtimes were nonexistent so food had to be dished up and wolfed down quickly. Then, she thought up and idea to sell her rice by rolling it into tennis-sized balls so that the workers could handle the rice easily and carry it around.

2.To keep it warm for a longer period

According to Wikipedia, during the olden days, chefs used to store their rice in wooden containers and cook their rice in the morning. However, they only consume the rice later in the day. In order to ensure the rice is warm, the chefs then apparently hit an idea of rolling the rice into ball shape because it does preserve warmth for a longer period.

3.For easy transportation by peddlers

A book called Not Just a Good Food Guide: Singapore expounded this theory, saying that the peddlers decided to roll the rice into ball shape and wrapped it with banana leaves for easier transportation to the market as they found out that it was too troublesome to bring too many crockery around when the are selling their chicken rice. Besides, the peddlers also claimed that this method also helped in sealing in the flavor of rice better.
